Ingredients: Grass-fed cultured butter (cream, cultures).
Great ghee starts with great dairy, but what happens next matters just as much.
Sowaka cultures the cream for 16+ hours before churning it ‘bilona’ style into cultured butter. The butter is then cooked low and slow in small batches before the finished ghee undergoes five levels of filtration.
Unlike industrial production designed around speed and uniformity, Sowaka keeps each dairy origin separate and gives the process the time it needs to develop its distinctive flavour, aroma and character.

Petaluma Reserve
Delicate and subtly rich. The mildest flavour of the trio. Made with dairy from the Pacheco Family Ranch in the fertile hills of Petaluma.
Normandy, France
Bold and earthy, from the heart of one of the world’s great dairy regions. The strongest flavour of the three.
Vermont
Mellow, sweet and aromatic, rom the lush pastures of Vermont. Sitting beautifully between Petaluma and Normandy in intensity.
There’s no right answer. Some customers find one favourite and stick with it. Others keep all three in rotation.

HOW TO USE
Ghee has a high smoke point of approximately 485°F and can go almost anywhere you’d normally reach for butter or cooking oil.

Your ghee may appear solid, semi-solid, liquid or granular depending on temperature and how quickly it cools. This natural variation is completely normal and doesn’t affect the quality or safety of the ghee. Once warmed, it melts completely.
FREQUENTLY ASKED QUESTIONS
Why are there three different origins?
Because ghee starts with dairy, and great dairy has terroir.
Sowaka sources from Petaluma, Vermont and Normandy, three regions with exceptional dairy traditions. Differences in climate, pasture, cows and farming create subtle differences in the finished ghee, just as origin matters in coffee, olive oil, chocolate or wine.
Keeping each origin separate lets you actually taste those differences for yourself.
How is Sowaka different from store-bought ghee?
Most commercial ghee is made for speed, consistency and scale. Sowaka takes the slower route.
The cream is cultured for 16+ hours, churned into butter and cooked low and slow in small batches. Combine that traditional process with exceptional single-origin dairy and you get the rich aroma, nutty flavour and depth that makes Sowaka taste fundamentally different from ordinary commercial ghee.
Why does Sowaka cost more than ordinary ghee?
Because Sowaka spends the money and time on the things you can taste.
Exceptional grass-fed dairy. Overnight culturing. Traditional churning. Slow, small-batch cooking. And three origins kept separate rather than blended for uniformity.
Taste a spoonful straight from the jar and the difference becomes much easier to understand.
What is ghee?
At its simplest, ghee is butter with the water and milk solids removed, leaving the butterfat behind.
But “ghee” tells you surprisingly little about how good it will taste. Just like coffee, olive oil or butter, the quality of the dairy and the way it’s processed can completely change the finished ingredient.
Is Sowaka organic?
Sowaka is not certified organic. The farms use organic farming practices and do not use pesticides or growth hormones.
What breeds are the cows?
Petaluma and Vermont use Jersey and Holstein cows. Normandy uses Normande cows.
The cows graze on pasture when weather permits, with feeding varying naturally by region and season.
Is the milk A1 or A2?
The dairy contains a combination of A1 and A2 beta-casein proteins. During ghee-making, the milk proteins are cooked out and discarded, and Sowaka uses five levels of filtration to remove the milk proteins from the finished ghee.
Why does my ghee sometimes have a different texture?
Sowaka lets its ghee cool naturally at room temperature in California. Changes in temperature and cooling speed can create anything from a smooth solid texture to larger granules with some liquid ghee.
That variation is completely normal. Stir it if you prefer a more uniform texture, or simply warm it and it will melt completely.
